Looking for a yummy, chocolate snack to satisfy a craving?!  Look no further!  These brownies are delectable and because you are using dark chocolate cocoa, they also pack a punch of antioxidants as well as fiber!  So go ahead and enjoy…you know you want to!

Ingredients:

1/2 cup vegetable oil

1 cup sugar

1 tsp vanilla

2 eggs

1/2 cup all purpose flour

1/3 cup unsweetened dark chocolate cocoa powder

1/4 tsp baking powder

1/4 tsp salt

 

Preheat oven to 350 degrees.  Spray a 9×9 baking dish.  In a large bowl, combine the oil, sugar and vanilla.  Stir well.

Next, add the eggs and beat until creamed together.

Add the remaining dry ingredients to the egg mixture.

Stir until the mixture is well combined…it is going to be a sticky batter!

Pour the batter into the already greased baking pan and bake in the oven for 25-30 minutes or until a toothpick comes out clean.

Allow brownies to cool or serve warm with some vanilla ice cream!  Any left over brownies can be placed in individual resealable plastic bags and popped in the freezer for a treat another day!

We have wild blackberry bushes growing in our backyard, and every summer my boys love to help me pick all the fresh berries!  I end up with loads of these berries by the end of the season.  I freeze most to be used later in the year, but I could resist baking this yummy desert with the plump berries!

 

Ingredients:

1 cup butter – melted

3 cups sugar

6 egg whites

1 cup sour cream

1/4 tsp baking soda

3 cups all purpose flour

1 tsp vanilla

1 1/2 cups blackberries

 

First, preheat oven to 350 degrees.  Next, in a large bowl cream the butter, sugar and egg whites together.

In a separate smaller bowl, mix the sour cream and the baking soda together.

Add half of the flour to the butter mixture and begin to stir it in.  Once it begins to mix, add half of the sour cream mixture.  After mixing that in, add the rest of the flour and the rest of the sour cream.  Mix well until all blended.

Add the vanilla and mix in *(make sure you chose a big enough bowl to start with…I didn’t realize the bowl I grabbed was my smaller one and ended up having to switch it over to something larger!)

Last but not least, slowly fold in the blackberries.

Spray a large bundt pan with cooking spray and pour the cake mixture into the pan.

Bake at 350 degrees for 60-70 minutes – make sure to check for doneness with a toothpick.  Once removed from the oven, flip the bundt pan over to cool.  Slide out the cake and enjoy!

Slice the cake in half and wrap with clear plastic wrap and then foil.  Place in the freezer to keep for a yummy dessert another day!

Blackberry Cobbler

I LOVE summer time!  All of these fresh picked berries are just awesome for someone who loves to cook!  We have tons of blackberries growing wild in my backyard.  Every summer, my boys and I pick all the the fresh blackberries and after eating a fair share of them right off the vines, I use the remainder of them to bake with!  This is a very simple recipe that is great for a backyard party or just a yummy after dinner treat!

 

Ingredients:

2 cups blackberries

1 1/3 cup all purpose flour

1 cup sugar

2 tsp baking powder

1/2 tsp salt

1 egg

3 tbsp butter – melted

1 tsp vanilla

 

Preheat oven to 375 degrees.  Spray a 9×9 baking dish with cooking spray and pour in the 2 cups of blackberries.

In a large bowl – add all of the dry ingredients and mix well.

Pour in the melted butter, egg and vanilla.

Mix the ingredients together.  This should result in a crumbly mixture, not a wet mixture.

Once mixed and crumbled, pour the crumbles over the blackberries in the dish.

Once the berries are completely coated with the flour mix, place the dish in the oven and bake for 30-40 minutes.  The crumbly top will brown and cook through.  Serve with a dollop of cool whip and some fresh berries for garnish!

Any uneaten portions can be frozen in individual plastic containers with lids to enjoy another day!

I have fond memories of my mom taking my brother and myself to the local farms to go blueberry and strawberry picking every year.  Now as a mom to my two boys, I want to do the same for them.  We picked a great strawberry crop back in May, and this summer I found a wonderful local berry farm where you can pick all you can carry blueberries!  My boys had a fun afternoon filling up their buckets!  We ended up with 10 lbs. of blueberries and some homemade honey made by the bees used to pollinate the blueberry fields!  The first thing I did when I got home was immediately freeze 5 lbs. of the blueberries.  This not only extends the shelf life of the berries, but it also gives you an ingredient for Blueberry Orange Smoothies!  After the berries were prepped and frozen, I only had to give about 2 seconds thought to the first recipe I wanted to make with my other 5 lbs. of fresh blueberries….my mom’s blueberry muffins!  They were my absolute favorite growing up, and luckily she shared her yummy recipe with me!

 

Ingredients:

2 eggs

1/4 cup melted butter3 cup sugar

3/4 cup milk

1 3/4 cup all purpose flour

3/4 tsp salt

1/3 cup sugar

2 tsp baking powder

1 cup blueberries

 

First, preheat the oven to 400 degrees.  Now, crack the two eggs into a large bowl.  Lightly beat them.

Melt the stick of butter in a microwave safe bowl and then pour into the bowl with the egg.  Add the milk and stir it together.

Next, it is time to add in all the dry ingredients and mix.

After all those ingredients have been mixed thoroughly, gently fold in the blueberries!

Gently pour mixture into a muffin tin lined with cupcake/muffin liners.  Fill about 2/3 full.

Bake at 400 degrees for 20-25 minutes (check after 20 minutes), until the tops are golden brown!

Muffins can be placed in resealable plastic bags and frozen.  Just leave in the fridge to thaw out when needed, or pop in the microwave and enjoy again another morning!
