cheddar cheese

Looking for a way to use up left over ham?  This is a great cheesy, creamy recipe that definitely warms you up on a cold winter day!

 

Ingredients:

3 1/2 cups potatoes – peeled and diced

1/3 cup celery – chopped

1/3 cup onion – diced

2 cups cooked ham – diced

3 1/4 cups chicken broth

1 tsp salt

1 tsp pepper

5 tbsp butter

5 tbsp flour

2 cups milk

2 cups cheddar cheese – shredded

 

First, peel and dice all the potatoes!

Then dice the celery and onions.

Finally, dice the cooked ham.

Add all of those ingredients into a large soup pot along with the chicken broth (I make my own with water and chicken bouillon).  You can also add your salt and pepper here.

Bring pot to boiling, and then reduce heat down to medium.  Cook until the potatoes are tender – about 30-40 minutes.  When the cooking time is coming to an end, it is time to make your cheese sauce!  In a separate sauce pot, melt the butter and whisk the flour in.

Once those two ingredients have been combined with no lumps, add the milk and cheese.  Continue whisking until the cheese has melted and you have a thick cheese sauce.

Pour the cheese sauce into the potato soup in the large soup pot. Stir to mix.

Serve hot with some bread for dipping!

Leftovers can be stored in freezer safe containers and frozen for dinner another night!

I could probably eat at least a dozen of these things, although I don’t believe that would be so great for my girlish figure!  These things taste just like the ones Red Lobster serves and they are so simple to make!

1 tsp parsley

1/4 cup butter – melted

1/4 cup sour cream

 

First, preheat the oven to 400 degrees.  In a large bowl, add the milk to the Bisquick.

Then add the cheese, butter, sour cream and seasonings.

Mix well – it will be a thick, gooey mixture.

Spray cooking spray on a cookie sheet and spoon out small golf-ball sized balls of the dough mixture.

Bake for 10 minutes.  Remove from the oven and use a basting brush to brush on some melted butter to the top of the biscuits.

Eat them while they’re hot!

IF you have any of these yummy biscuits left, you can store them in resealable plastic bags and pop them in the freezer!

Mexican Meatloaf

I remember as a kid I used to hate meatloaf night!  I wasn’t a big fan of the traditional ketchup sauce meatloaf, just so blah.  So, when I am making dinner for my own kids, I am all about jazzing it up so dinner doesn’t become something they dread!

 

Ingredients:

1 lb lean ground beef

2/3 cup milk

1/3 cup salsa

1 tbsp Worcestershire sauce

1/2 tsp ground mustard

1/2 tsp salt

1/4 tsp pepper

1 garlic clove – minced

1 egg

1/2 cup bread crumbs

1 small onion – diced

1/2 cup shredded extra sharp cheddar cheese

 

First, preheat the oven to 350 degrees.  Next, in a large bowl, add the meat along with the other ingredients.

Mix all the ingredients up well.

Spray a large loaf pan with cooking spray and pour the meat mixture into it, spreading it evenly.

Bake the meatloaf dish for 60-70 minutes at 350 degrees or until the meat has cooked through to a temperature of 160 degrees.

Once meat has cooked through, remove from oven and allow to sit for 5 minutes before cutting and serving.  You can serve it with a little extra salsa on top, or just as is with some mashed potatoes and veggies!

Leftover meat loaf can be sliced into individual servings, placed in resealable plastic bags and stored in the freezer for dinner another night!

This is a super easy casserole that has a sweet tanginess.  Very little prep time and you have a yummy, satisfying meal.  This is one of my personal favorites!

 

Ingredients:

1 lb ground beef

1 16 oz. can of baked beans

3/4 cups of bbq sauce of your choosing

2 tbsp brown sugar

1 tbsp minced onion

1 pkg of biscuits

1 cup shredded Cheddar cheese

 

First step is to preheat the oven to 375 degrees.  Next, you will need to spray a frying pan with cooking spray and brown the meat.

After the meat has cooked through, add the beans, bbq sauce, brown sugar, and minced onions to the meat.  Stir the ingredients and continue to cook until it begins to bubble up.

Next, spray cooking spray in a 9×13 baking dish.  Layer the bottom of the dish with the meat mixture.  Open up the biscuit container.  Separate each biscuit into two halves and place the cut half down flat onto the meat mixture.

Once the entire dish has been covered with biscuits, place in the oven and bake for 15-20 minutes, or until the biscuits begin to brown.  Next you will pull the dish out of the oven and cover the top with the shredded cheddar cheese.  Place back in the oven for another minute or two, or until the cheese has melted.  Pull out the dish and serve!

The recipe makes a huge portion, so the left overs are easily stored in plastic containers and popped into the freezer for dinner another night!
