These are super tasty, easy to make, and are great for a quick warm breakfast before school/work!

 

Ingredients:

8 oz. cream cheese – softened

1 egg yolk

1 cup sugar

24 slices of bread – crusts removed

1 tbsp cinnamon

3 tbsp butter – melted

 

First, cut off all of the crusts on your bread.

Next, combine the cream cheese, yolk and 1/4 cup of the sugar in a bowl.  Set aside.

With a rolling pin, roll out the slices of bread to make a thin layer.

Add a thin layer of the cream cheese mixture to each slice of rolled out bread.  Coat evenly.

Once each bread slice is coated with the cheese mixture, roll them up.  Start at one corner and roll across.  Place the rolls on a baking sheet.

In a separate bowl, melt the butter.  In another, add the remaining 3/4 cup sugar and the cinnamon.

Coat each individual roll with butter and then roll in the cinnamon sugar mix to cover.

Place the finished rolls back on a cookie sheet, and then place in the freezer for at least 2 hours to firm up.

After the 2 hours is up, preheat the oven to 400 degrees.  Bake the rolls for 10 minutes.  Serve hot with some maple syrup!

These can be made in bulk and kept frozen (before baking) for up to 2 months!

Gingerbread

This is a great spicy cake that goes wonderfully with a cup of coffee or hot tea!  Add a little caramel sauce to bring out the flavor!

 

Ingredients:

1/2 cup sugar

1/2 cup brown sugar

1/2 cup butter

1 egg

1/2 cup honey

2 1/2 cups flour

1 1/2 tsp baking soda

2 tsp cinnamon

2 tsp ground ginger

1 tsp ground cloves

1/2 tsp salt

1 cup hot water

 

First, preheat the oven to 350 degrees.  In a large bowl, cream together the white sugar and the butter.

Next, mix in the egg.

Add the brown sugar and the honey, mix well.

Add all dry ingredients into the bowl. Begin to mix.

Add in the cup of hot water to help blend the ingredients.

Once the ingredients have been combined, pour the batter into a greased 9×9 baking dish.

Bake for 45-55 minutes, or until a toothpick comes out clean.  Serve warm with some vanilla ice cream or some caramel sauce!

I like to cut up the cake into individual servings and freeze.  That way I have one slice of cake to warm up with my coffee on a cold winter day!

This is by far, one of the most moist, delicious breads!  The Greek yogurt gives it a great creamy taste and you can use either fresh or frozen strawberries!

 

Ingredients:

1/2 cup butter – melted

3/4 cup sugar

2 eggs

1 container of Greek yogurt (I used honey flavored)

1 3/4 cup all purpose flour

1 tsp vanilla

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp cinnamon

1 cup strawberries – chopped (fresh or frozen and thawed)

 

Preheat oven to 350 degrees.  In a large bowl, cream together the melted butter and the sugar.

Next, mix in the eggs and the Greek yogurt.

After those four ingredients have been mixed together, add the vanilla.

Add all dry ingredients and mix thoroughly.

Fold in chopped strawberries.

Pour mixture into individual mini loaf pans (or 1 large loaf pan) and place in the oven.  Bake at 350 degrees for 30 minutes (55-60 minutes for a large loaf).

Once cooked through, remove from oven and allow to cool.  Enjoy with a cup of coffee or a large glass of milk!

The leftovers can be stored in individual, resealable plastic bags and put in the freezer for a yummy treat another day!

Got some leftover applesauce you are looking to use up?  This cake is AMAZING!  It is super moist and full of spices that just scream fall!

 

Ingredients:

2 cups flour

1 1/2 tsp baking soda

1 tsp Kosher salt

1/4 tsp black pepper

2 tsp cinnamon

1 tsp ground ginger

1/4 tsp allspice

2 eggs

1 cup sugar

1  1/2 cups applesauce (I used leftovers from my Homemade Applesauce recipe)

2/3 cup vegetable oil

1 tsp vanilla

 

Glaze topping:

1/2 cup butter

2 tsp milk

1/2 cup brown sugar

 

First, preheat oven to 350 degrees.  Next, cream together eggs and sugar.

Add the oil, vanilla and applesauce and mix well.

Add all the dry ingredients, including all spices.

Slowly and carefully mix until all the dry ingredients have been combined in the applesauce mixture.

Grease and then flour a bundt pan.

Pour the cake mixture into the bundt pan and bake at 350 degrees for 45 minutes or until an inserted toothpick comes out clean.

Remove from oven and flip out the cake onto a clean, dry service.  All to cool down.

While the cake is cooling, it is time to make the caramel glaze.   In a small sauce pan, melt the 1/2 cup butter (or 1 stick).  Add the 2 tsp milk and finally the brown sugar.  Stir until blended.

Place the cake on your serving plate and slowly spoon the caramel glaze down it, covering the entire cake.

Allow glaze to cool and serve!

I made my cake to share with my co-workers, who leave nothing behind!  But, if you were looking for a dessert for the family and this cake was too much for you, you can cut it in half and wrap the other half first in plastic wrap and then in foil and place in the freezer to thaw out and enjoy another time!
