Gingerbread

This is a great spicy cake that goes wonderfully with a cup of coffee or hot tea!  Add a little caramel sauce to bring out the flavor!

 

Ingredients:

1/2 cup sugar

1/2 cup brown sugar

1/2 cup butter

1 egg

1/2 cup honey

2 1/2 cups flour

1 1/2 tsp baking soda

2 tsp cinnamon

2 tsp ground ginger

1 tsp ground cloves

1/2 tsp salt

1 cup hot water

 

First, preheat the oven to 350 degrees.  In a large bowl, cream together the white sugar and the butter.

Next, mix in the egg.

Add the brown sugar and the honey, mix well.

Add all dry ingredients into the bowl. Begin to mix.

Add in the cup of hot water to help blend the ingredients.

Once the ingredients have been combined, pour the batter into a greased 9×9 baking dish.

Bake for 45-55 minutes, or until a toothpick comes out clean.  Serve warm with some vanilla ice cream or some caramel sauce!

I like to cut up the cake into individual servings and freeze.  That way I have one slice of cake to warm up with my coffee on a cold winter day!

Fall is in the air!  With the change to cooler weather, the boys and I made our annual hike out to the mountain orchard to pick some apples!

   

We picked three bags FULL of apples – about 25 lbs of apples in all!  In season right now are Golden Delicious and Jonagold (which are a cross between a Golden Delicious and a Jonathan apple).  So, back home I am breaking out the apple recipes and the house smells delicious!  One of my favorites is Apple Raisin Spiced Bread.

 

Ingredients:

1 1/3 cups all purpose flour

3/4 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground cloves

1 cup sugar

1/2 cup vegetable oil

2 eggs

1 tsp vanilla

2 cups chopped apples

1/2 cup raisins

1/2 cup pecans

2 tsp sugar mixed with 1/4 tsp cinnamon – topping

 

First, preheat the oven to 350 degrees.  Next, chop up two medium-large apples, which equals about 2 cups.

 In a large bowl, beat together the 2 eggs and the tsp of vanilla.  Then add the cup of sugar and the 1/2 cup oil and mix well.

Add the cut apples, raisins and pecans to the sugar mix and stir.

Now it is time to add the dry ingredients, including all spices.

Mix up well until all dry ingredients have been combined.

Pour the batter into individual loaf pans or into one large loaf pan.  Bake at 350 for approximately 30 minutes for mini loaves or 60 minutes for large loaf.

Once cooked through, remove from oven and baste with a little bit of melted butter.  Sprinkle the sugar/cinnamon mix over top to give a light coating.

Allow to cool and serve!  Makes a great quick breakfast or a healthy after school snack!

Any extras can be placed in individual resealable plastic bags and stored in the freezer for a later date.

This is by far, my absolute favorite soup!  It has such a great flavor, and a wonderful aroma when cooking!  The “spicy” in the title refers to all of the spices added, not a hot flavor.

 

Ingredients:

1 lb ground beef

1 large onion – chopped

1 garlic clove – minced

4 cups beef broth

3 cups water

2 stalks celery – chopped

2 large carrots – chopped

3 bay leaves

1 (15 oz) can tomato sauce

3 cups chopped cabbage

1/2 tsp dried mustard

2 tbsp sugar

2 tbsp apple cider vinegar

1/2 tsp dried marjoram

1/2 tsp dried thyme

1/4 tsp ground cinnamon

1/8 tsp ground cloves

1/2 tsp pepper

1 cup instant brown rice

salt (to taste)

 

First, chop up your onion.

Next, you will need a large soup pan.  Spray it with cooking spray, and add the chopped onions along with the garlic and the ground beef.  Cook until meat is thoroughly cooked and the onions have softened.

While the meat and onion is cooking, it is time to chop up the celery, carrots and cabbage.

Drain out any fat liquid from the meat and onion mixture and then add the chopped vegetables to the soup pot.  Then add the beef broth.

Next add the tomato sauce, all of the spices and the 3 cups of water.

Mix the ingredients up well and bring the soup to a boil.  After it begins to boil, cover and reduce to low.  Simmer for about 30 minutes.

After 30 minutes of simmering, add 1 cup of instant brown rice.  Bring back to a boil and then reduce heat to low and cover.  Cook 5 minutes.

Once the rice has cooked, remember to remove the bay leaves before serving!

Serve the soup with a side of french bread or just by itself!

This soup freezes well.  Just pour it into a plastic container with lid, and freeze to enjoy another night!

Cincinnati Chili

I love chili, but I had never tried Cincinnati chili until a visit to a restaurant that specializes in chili.  I have always made my chili with three beans, but Cincinnati chili is just meat and onion.  It has a great flavor and tons of different spices that work together to make it super yummy!

Ingredients:

1 tbsp. vegetable oil

1/2 cup chopped onion – chopped.

2 lbs. ground beef

1/4 cup chili powder

1 tsp cinnamon

1 tsp cumin

1/4 tsp allspice

1/4 tsp cloves

1 bay leaf

1 square of unsweetened chocolate

2 (10.5 oz) cans of beef broth

1 (15 oz) can tomato sauce

2 tbsp cider vinegar

1/4 tsp ground cayenne pepper

 

To get started, chop up the 1/2 cup of onion.  Next, spray a large cooking pot with cooking spray.  Add the tbsp of vegetable oil and add the onion.  Cook on medium until onion becomes tender.

After the onions have cooked, add the ground beef and cook until browned.

Once the meat has browned, drain off any fat and return the pot to the burner.  Next it is time to add your broth and sauce.

Stir that up well and then begin adding the dry spices and the vinegar.

And last, but not least, add the block of chocolate to give it that rich flavoring!

Bring to a boil and then reduce heat.  Simmer for 1 1/2 hours.  Make sure you remove the bay leaf at the end of the cooking time, they are poisonous if consumed.

Serve the chili over Homemade Corn Bread or over spaghetti noodles!

The chili stores well in the freezer for reheating at another meal!
