Gingerbread

This is a great spicy cake that goes wonderfully with a cup of coffee or hot tea!  Add a little caramel sauce to bring out the flavor!

 

Ingredients:

1/2 cup sugar

1/2 cup brown sugar

1/2 cup butter

1 egg

1/2 cup honey

2 1/2 cups flour

1 1/2 tsp baking soda

2 tsp cinnamon

2 tsp ground ginger

1 tsp ground cloves

1/2 tsp salt

1 cup hot water

 

First, preheat the oven to 350 degrees.  In a large bowl, cream together the white sugar and the butter.

Next, mix in the egg.

Add the brown sugar and the honey, mix well.

Add all dry ingredients into the bowl. Begin to mix.

Add in the cup of hot water to help blend the ingredients.

Once the ingredients have been combined, pour the batter into a greased 9×9 baking dish.

Bake for 45-55 minutes, or until a toothpick comes out clean.  Serve warm with some vanilla ice cream or some caramel sauce!

I like to cut up the cake into individual servings and freeze.  That way I have one slice of cake to warm up with my coffee on a cold winter day!

Remember those frozen banana chips you’ve been keeping in the freezer since the last time your bananas got too ripe?!  Well, here is a great fall recipe to use them up!  I swear, it is just like eating a slice of pumpkin pie!

 

Ingredients:

1 – 5 oz. container of Greek yogurt – I used honey flavored

1 frozen banana – previously cut into chips and frozen

1/2 cup canned pumpkin (or cooked fresh, if you have it)

1/4 cup milk

1/4 cup dry oats

2 tsp honey

1 tsp pumpkin pie spice

1 tsp vanilla

 

In the blender, add your yogurt and frozen bananas.

Next add the pumpkin.

Add the oats and the milk.

Drizzle in the honey and add the pumpkin pie spice and vanilla.

Blend well until smooth.  Serve with a little cinnamon on top!

I love a good burger, but sometimes I don’t want the ground beef.  This is a much heart healthier option, using ground turkey!

 

Ingredients:

1 lb ground turkey

1/4 cup yellow mustard

2 tbsp honey

1/4 tsp salt

1/4 tsp pepper

 

In a large bowl, add the ground turkey and mash it up a bit.  Add the mustard and honey.

Mix up the meat, mustard and honey and add the salt and pepper to the mix.

After the meat has been thoroughly mixed, make patties.  You can get 8 good sized patties out of the 1 lb of meat.

Fry in a frying pan on medium heat.  Flip and cook both sides until patty is cooked through – out 8-10 minutes.

Serve on a hamburger roll.  I like to add shredded cheddar cheese on top!

The remaining patties can be stored in individual resealable plastic bags and placed in the freezer to keep for dinner another night!

Smoothies are a great use of blueberries from our trip to pick at a local berry farm!  I am always looking for a way to get my boys to eat a bunch of healthy foods without them realizing it is “healthy”!  This smoothie is simple and delicious and a great hit of vitamin C and antioxidants!

 

Ingredients:

1 cup Greek vanilla yogurt

1 cup orange juice

1 cup frozen blueberries

4 tbsp honey

 

In a blender, combine all ingredients.

Blend until smooth.

Enjoy immediately as a refreshing drink, or re-freeze into popsicles to enjoy another day!
