Peanut Butter

Looking for a simple, fast cookie recipe that doesn’t require baking?  Look no further!  Perfect for a quick afternoon snack or a special treat for the kids!

 

Ingredients:

1/2 cup butter

2 cups sugar

1/2 cup milk

4 tbsp cocoa

1/2 cup peanut butter

3 1/2 cups quick oats

2 tsp vanilla

 

Add the first three ingredients to a sauce pan and bring to a boil.  Make sure to stir continuously while bringing to a boil!

Once the ingredients begin to boil, allow to boil 1 minute before adding the other ingredients.  Add the 4 remaining ingredients to the boiling mixture, and stir to mix.

Remove from heat.  Place dollops of the chocolate oat mixture on a piece of wax paper.

Allow to sit on the counter and cool before eating (or place in the refrigerator for 10  minutes to expedite the process!)  Serve with a glass of milk or a cup of coffee!

Double the recipe to have a bunch of leftovers!  These leftovers can be stored in freezer safe re-sealable plastic bags for a yummy snack another day!

 

Chocolate Oatmeal No Bake Cookies

This recipe is going to make you want to pour yourself a tall glass of milk!  This rich, flavorful cake will be the hit of any party!

 

Ingredients:

1 cup butter – melted

1 1/2 cups sugar

1 cup brown sugar

1/2 cup peanut butter

1 tsp vanilla

5 eggs

3 cups flour

1/2 tsp baking powder

1/4 tsp salt

1 cup milk

1 (10 oz) pkg of peanut butter chips

 

First, preheat the oven to 325 degrees and then spray and flour your bundt pan.  Next, beat together the melted butter and eggs.

Add in the two types of sugar and stir until creamed together.

Once mixed, add in the peanut butter and the vanilla.

Once blended, it is time to add your dry ingredients.  I added 1 1/2 cups of flour, making sure to mix it well.  Then I added the remaining flour, baking powder and salt.

Pour in the cup of milk to help loosen up the dough and make sure all of the flour is mixed in.  Last, but not least, add the peanut butter chips in and stir well.

Pour cake mix into your large, greased bundt pan and bake for 1 hour and 15-25 minutes, checking with a toothpick to ensure it has cooked through.

Once the cake has finished cooking, remove from the oven and allow to cool slightly before flipping it out of the bundt pan and on to a plate.

Slice and serve warm with a tall glass of cold milk!

Any uneaten portion of the cake can be wrapped in plastic wrap and then wrapped again in foil and stored in the freezer to be thawed out for dessert another time!

This is a super yummy snack that will take care of your sweet tooth and is still a little on the healthier side!  Also makes a special after school snack for the kids!

 

Ingredients:

1 banana – cut into chips

peanut butter

milk chocolate

milk

 

First, cut up the banana into small chip sized pieces.

Next, using a knife, add peanut butter to each of the banana tops.  Place in the freezer for about an hour to harden up the banana, this makes it easier to dip.

After the bananas have frozen through, add water into a sauce pan and bring to a boil.  Place your chocolate into a large metal bowl, and place the bowl over top of the boiling water – this makes a homemade double boiler.

While the chocolate is beginning to melt, add a small bit of milk to make the chocolate a creaming, pour-able mixture.

After the chocolate has been melted to desired thickness, use a fork to dip the banana pieces into the chocolate and a spoon to completely coat each piece.

Place the chocolate covered bananas back on the baking sheet.  Once all have been covered, place back in the freezer for about an hour to harden the chocolate.

After the chocolate has hardened, enjoy these little mini bites as a snack or an after dinner treat!

Store the extras in a freezer ready plastic container to enjoy another day!

If you are anything like me, you hate to waste food.  Sometimes I end up getting way more fresh fruit at the grocery store than we can eat before it goes bad.  This is especially true with the bananas.  I have started peeling, slicing and freezing them while they are still super ripe yet not rotten.  It is really easy to do and gives you frozen banana chips to use in recipes!

This smoothie makes an amazing on-the-go breakfast…just blend and drink!  It is super healthy and chocked full of protein and potassium.  When using the frozen banana chips in this recipe, it gives the smoothie the consistency of a milk shake.  My kids love this ultra healthy snack!

 

Ingredients:

2 bananas – cut into chips and frozen (or about 1 1/2 – 2 cups if you keep the frozen banana chips on hand in the freezer)

6 oz Greek vanilla yogurt

1/3 cup peanut butter – creamy

1/3 cup low fat milk

spoonful of unsweetened cocoa powder

 

Just add the milk, yogurt, and peanut butter to the blender.  Add in the bananas and blend.

After it has been completely blended, add the spoonful of cocoa powder and use the mix button on the blender to blend it into the smoothie.

Serve immediately to have a cool refreshing breakfast, or pour into freezer pop molds and freeze for a frozen treat later!
