strawberries

Looking for a simple, healthy, fun afternoon snack for the kids?  Then this is all you need…a container of Greek yogurt and a bowl full of strawberries!

First, wash the strawberries and cut the tops off of them.

Next, open the yogurt and mix thoroughly.  Then dip each strawberry into the yogurt to coat.

Place each coated strawberry on a tray covered with wax paper.

Place strawberries in the freezer for around 30 minutes or so.  Kids will love the cool frozen treat!

You can make these in mass quantities to leave in the freezer for a quick, healthy snack or even to use to make smoothies!  For a smoothie, just take the frozen yogurt covered strawberries and add a fresh banana and some juicy grapes to the blender.  No need for ice or any liquids.  Comes out cool, thick and the perfect consistency!

Strawberry Bread

in Bread

This is by far, one of the most moist, delicious breads!  The Greek yogurt gives it a great creamy taste and you can use either fresh or frozen strawberries!

Ingredients:

1/2 cup butter – melted

3/4 cup sugar

2 eggs

1 container of Greek yogurt (I used honey flavored)

1 3/4 cup all purpose flour

1 tsp vanilla

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp cinnamon

1 cup strawberries – chopped (fresh or frozen and thawed)

Preheat oven to 350 degrees.  In a large bowl, cream together the melted butter and the sugar.

Next, mix in the eggs and the Greek yogurt.

After those four ingredients have been mixed together, add the vanilla.

Add all dry ingredients and mix thoroughly.

Fold in chopped strawberries.

Pour mixture into individual mini loaf pans (or 1 large loaf pan) and place in the oven.  Bake at 350 degrees for 30 minutes (55-60 minutes for a large loaf).

Once cooked through, remove from oven and allow to cool.  Enjoy with a cup of coffee or a large glass of milk!

The leftovers can be stored in individual, resealable plastic bags and put in the freezer for a yummy treat another day!

I love making healthy summer snacks for my boys!  This is a quick, easy recipe that is full of healthy ingredients, yet they will still consider it a treat!

Ingredients:

1 1/2 cups frozen strawberries

1 banana – sliced

1/2 cup blueberries

1 1/2 cups low fat milk

1 cup Greek yogurt – vanilla flavored

2 tbsp honey

Instructions are simple – combine the milk, yogurt, and fruit in the blender.  Then add honey to taste.  I don’t like it terribly sweet, so 2 tbsp was a great amount, but you can add more to your liking.

Blend the ingredients together and pour the smoothie into freezer pop containers.  Place lids on the mixture.

Freeze for 1-2 hours until the smoothie has firmed up…then serve them up as a yummy, healthy snack on a hot day!

This is a great way to use the extra strawberries you froze from the picking season!  All you need to make this super yummy, kid-approved smoothie is:

1 container of yogurt (I used honey Greek yogurt)

1/2 cup milk

1/4 orange juice

1 tbsp sugar

10-14 medium to large frozen strawberries (make sure they are completely frozen because they will take the place of ice in the recipe)

Add all of the ingredients to the blender and blend until smooth.

Pour into fun glasses and serve!  Makes 2-3 servings (depending on your glass)
